Cast-Iron Blistered Brussels Sprouts

Ingredients
1 pound fresh brussels sprouts
3 tablespoons canola oil
¾ teaspoon kosher salt
1 tablespoon honey
1 tablespoon hot water
1 tablespoon minced garlic (about 2 cloves)
1 tablespoon soy sauce
¼ teaspoon dry ground red pepper flakes
½ cup torn fresh mint leaves

This is absolutely the best way to prepare Brussels sprouts. When fried over high heat, it caramelizes on the outside, and inside it turns out a perfect crispy-tender texture. Use a 12-inch cast-iron skillet or cook in two batches.
Preheat a 12-inch cast-iron skillet over medium-high heat for 5 minutes. Trim the Brussels sprouts and cut them in half lengthwise. Add the canola oil to the pan and tilt the pan to coat the bottom evenly. Place the Brussels sprouts, cut side down, in a single layer on the skillet. Cook, without stirring, for 4 minutes or until lightly browned. Sprinkle with kosher salt; stir and cook for another 2 minutes. Mix honey and hot water. Combine the minced garlic, soy sauce, dried crushed red pepper and honey mixture with the Brussels sprouts. Sprinkle with mint leaves and serve immediately.
