Chicken and Apple Salad

Ingredients
1/3 1/2 pound grilled chicken
2 medium Granny Smith apples, peeled, cut into 1/4-inch cubes
2 tablespoons fresh lime juice
2 tablespoons finely chopped red onion
½ cup low-fat mayonnaise
2 tablespoons finely chopped cilantro
¼ teaspoon ground red pepper flakes

8 cups mixed greens for salad

This low-calorie chicken and apple salad adds a zesty twist to an old childhood favorite. Instead of serving this salad with the main course on top of the greens, wrap it in whole-grain rolls with a few spinach leaves. Serve the wrapper with baked potato chips or tortilla as a side dish.
Remove the meat from the chicken and cut into cubes, getting rid of the skin and bones (you should get about 4 cups of meat).Combine the apples with 1 tablespoon. In a large bowl, whisk together the lime juice. Add the chicken and red onion. In a separate small bowl, whisk together the mayonnaise, coriander, red pepper, 1/2 tsp salt, and remaining 1 tbsp lime juice. Mix the dressing with the chicken mixture to coat. Add some salt.Arrange the greens on four plates. Sprinkle with chicken salad and serve.
