Chicken-and-Cabbage Fried Rice

Ingredients
5 tablespoons vegetable oil
2 ½ cups cored and chopped napa cabbage (about 1/4 small head)
1 medium onion, coarsely chopped
4 sliced white and green green onion slices (about 1 cup total)
2 teaspoons grated fresh ginger
2 garlic cloves, finely chopped
5 cups cooked brown or white rice
3 large eggs, lightly beaten
3 tablespoons low-sodium soy sauce
2 cups shredded, boneless, skinless, grilled boiled chicken (about 8 ounces).)
To make
One-course meals make a weeknight dinner light, and fried rice with chicken and cabbage is no exception. This family-friendly dish is prepared in just 30 minutes.
Preheat 2 tablespoons Heat the oil in a wok or large nonstick skillet over medium-high heat until the oil begins to shimmer. Add the cabbage, onion and the white parts of the green onion and cook, stirring, for 30 seconds. Add the ginger and garlic to the pan, stir to combine with the cabbage mixture, and cook, stirring, for another 15-20 seconds. Transfer to a wide, shallow bowl or plate.Heat the remaining 3 tablespoons. Heat the oil in the same skillet. Add the rice, stir until it is covered with oil, and put it in the pan (but do not press it down). Let the rice cook for 2 minutes, then stir to combine. Let the rice cool for another 1 minute, then press against the edges of the pan. Add the eggs to the center of the pan and mix to make an omelette. Break the eggs into small pieces and toss with the rice.Pour soy sauce over the rice, add the chicken and mix well. Cook for another 1-2 minutes to allow it to warm up. Add the cabbage mixture and half the green onions and continue cooking, stirring, until the rice is warmed through, about 1 minute. Sprinkle with the remaining green onions and serve.
