Chicken and Edamame Couscous Salad

Ingredients
¾ cup water
чашка cup raw whole-grain couscous
¾ cup frozen inshell edamame
3 tablespoons fresh orange juice
2 tablespoons extra virgin olive oil
1 tablespoon apple cider vinegar
2 teaspoons honey
½ teaspoon salt
½ teaspoon black pepper
2 cups coarsely chopped spinach
2 cups shredded skinless and boneless chicken breast for grilling

¼ cup coarsely chopped dried cranberries
3 tablespoons chopped unsalted peanuts, toasted dry

The sweet and spicy dressing for this salad is complemented by dried cranberries, and roasted peanuts give a pleasant crunch.
Bring 3/4 cup water in a saucepan to a boil; add couscous. Remove from heat; cover and let stand for 5 minutes. Whisk the couscous with a fork. Transfer to a large bowl.Prepare the edamame according to the package directions; strain. Rinse with cold water; drain.While the edamame is being prepared, combine the orange juice and the following 5 ingredients (with the addition of pepper), mixing well with a whisk. Add edamame, spinach, and the following 3 ingredients (except cranberries) to the couscous. Drizzle the orange juice mixture over the salad; stir to coat. Sprinkle with chopped peanuts.
