Ingredients
Salad:
1 (2 pounds) whole-baked, skinless chicken
11 cups torn romaine lettuce (approximately 1 1/4 pounds)
1 cup red bell pepper strips
Vinaigrette:
3 tablespoons olive oil
1 ½ tablespoons fresh lemon juice
2 teaspoons worcestershire sauce
2 teaspoons dijon mustard
¼ teaspoon sugar
¼ teaspoon salt
¼ teaspoon ground black pepper
1 minced garlic clove
1 ½ cups plain croutons
½ cup (2 oz) grated fresh parmesan cheese

This Caesar chicken salad recipe is one of our best! Using pre-cooked grilled chicken makes this salad particularly easy and quick, although any leftover chicken will do.
To make the salad, peel the chicken from the bones; chop with 2 forks to measure out 3 cups of meat. Combine the chicken, lettuce, and bell pepper in a large bowl.To make the vinaigrette, combine the butter and the following 7 ingredients (vegetable oil with garlic) in a bowl, mixing well with a whisk. Pour over the salad; mix well. Sprinkle with croutons and cheese; mix gently until smooth.
