Bookmark this page

Ingredients
1 ½ cups chopped strawberries
½ cup diced peeled ripe avocado
2 tablespoons ground jalapeno pepper, pitted
2 tablespoons chopped fresh cilantro
2 teaspoons fresh lime juice
¾ teaspoon kosher salt, divided
1 tablespoon olive oil
4 chicken breast patties (4 oz each)
¼ teaspoon freshly ground black pepper
4 lime wedges
To make
This colorful, sophisticated dish uses the best seasonal ingredients with sweet and tangy fruit salsa, which is equally delicious served with pork chops or whole-grain tortilla chips. Roasting jalapenos without seeds turns out soft, but you can not add it. To diversify your meal, try serving chicken and salsa on top of rice or with a simple side dish.
Combine strawberries, avocado, jalapeno, coriander, lime juice, and 1/4 teaspoon salt in a small bowl; toss to combine.Preheat a large skillet over medium-high heat. Pour the oil into the pan; stir to coat. Sprinkle the chicken with the remaining 1/2 teaspoon salt and pepper. Transfer the chicken to the skillet; cook for 3 minutes on each side or until tender.Divide the chicken into 4 serving plates and spoon the salsa evenly over each serving. Garnish each serving with a lime wedge.
