Ingredients

3 tablespoons vegetable oil
1 pound pitted chicken thighs
Salt and pepper
½ cup low-sodium chicken broth
1 ½ pounds peeled potatoes, cut into 1/2-inch cubes
½ medium red onion, diced
½ medium green bell pepper, peeled and diced
2 sliced white and green green onion slices
1 clove garlic, minced
½ teaspoon dried thyme
½ teaspoon paprika

This one-course breakfast dish is delicious at any time of the day. Add a special flavor to the chicken okroshka with sweet, spicy or smoked paprika.
Heat 1 tablespoon of oil in a skillet over medium-high heat. Sprinkle the chicken with salt and pepper. Cook the chicken, turning, for 10 minutes. Drain the fat. Pour in the broth, cover, and reduce the heat to low; cook for 35 minutes. Remove chicken; allow to cool. Chop the meat. Remove the fat from the cooking liquid; leave the liquid out.Put the potatoes in a saucepan, cover with salted water; bring to a boil. Cook for 5 minutes; drain.Heat the remaining oil in a skillet over medium-high heat. Saute the potatoes, onion, bell pepper and white parts of the green onion for 5 minutes. Add the garlic, thyme, paprika, 1 tsp salt and 1/2 tsp pepper; simmer for 4 minutes. Add the chicken; saute for 3 minutes, adding the remaining liquid as needed. Before serving, sprinkle with green onions.
