Chicken in Garlic Sauce

Ingredients
2 skinless chicken breast halves (about 1 pound)
2 skinless chicken drumsticks (about 3/4 pound)
2 skinless chicken thighs (about 3/4 pound)
½ teaspoon kosher salt
1 tablespoon olive oil
10 minced garlic cloves
1 dried hot red chili pepper
¼ cup low-sodium, fat-free chicken stock
2 tablespoons dry white wine
¼ teaspoon crushed saffron strands
1 bay leaf
2 tablespoons chopped fresh parsley
To make
Chicken in garlic sauce is traditionally prepared by quickly frying the chicken in olive oil with garlic cloves. The seasoned butter is then served as a sauce. However, the recipe has endless variations. In this version, less oil is used; the composition includes wine, saffron and chili pepper; it is cooked over low heat to add juiciness.
Sprinkle the chicken with salt. Heat the oil in a large nonstick skillet over medium-high heat. Add the chicken and cook for 5 minutes or until golden brown. Turn the chicken upside down. Add the garlic and chili and cook for 5 minutes, stirring frequently.Add the broth, wine, saffron and bay leaf. Bring to a boil; cover, reduce heat, and simmer for 30 minutes or until chicken is tender. Discard the chili and bay leaf. Sprinkle with parsley.
