Chicken in Waffles

Ingredients
1 large egg
1 ⅛ cup buttermilk
2 tablespoons melted unsalted butter
¾ cup (approximately 3 1/4 ounces) all-purpose flour
½ cup yellow cornmeal
½ tablespoon granulated sugar
1 teaspoon kosher salt
1 teaspoon baking powder
½ teaspoon baking soda
⅛ 1 teaspoon ground nutmeg
8 ounces remaining skinned fried chicken, coarsely chopped (leave the breadcrumbs that are falling off to top the finished dish)
Cooking Spray
¾ cup pure maple syrup
¼ cup unsalted butter, sliced

This decadent brunch recipe is exactly like the "chicken without waffles" recipe, except that we literally put the chicken in the waffles — so it's easier to eat. In addition, the inclusion of sliced fried chicken in a deliciously delicious cornmeal waffle batter allows you to evenly distribute the flavor of fried chicken in each piece. Even though it's an excellent breakfast after dinner dish with fried chicken, this savory-sweet dish is so awesome that it deserves to go out and buy a box of fried chicken just for the occasion. Brush these waffles with a piece of softened butter, drizzle generously with maple syrup, and sprinkle with the remaining crispy fried chicken crumbs for a legendary brunch.
Lightly beat the egg in a large bowl. Whisk together the buttermilk and melted butter until smooth. Whisk together the flour, cornmeal, sugar, salt, baking powder, baking soda, and nutmeg in a separate bowl. Add the flour mixture to the buttermilk mixture; beat until smooth. Add the chopped chicken.Preheat the waffle iron on medium heat according to the manufacturer's instructions. Brush with cooking spray. Add 2/3 cup batter to each quadrant. Cook until lightly browned, 4 to 5 minutes. Place 1 waffle on each of the 4 plates. Brush evenly with syrup and butter slices. Sprinkle with pieces of fried chicken breadcrumbs.
