Chicken, Peppers, Onions, and Mushrooms with Marsala Wine

Ingredients
Cooking Spray
1 ½ pound chicken breasts
1 ½ cups thinly sliced onion
1 cup thinly sliced red bell pepper (about 1 medium size)
2 tablespoons olive oil
½ teaspoon salt
½ teaspoon ground black pepper
1 pack (8 oz) mixes of exotic mushrooms with sliced ingredients (for example, shiitake, cremini and oysters)
3 tablespoons marsala wine

Preheat a large nonstick skillet over medium-high heat. Brush the mold with cooking spray. Transfer the chicken breasts to the skillet; simmer for 7 minutes or until the chicken is tender. Remove the chicken from the pan. Add the chopped onion and bell pepper to the pan; simmer for 5 minutes or until the onion begins to brown. Add the olive oil, salt, black pepper, and chopped exotic mushrooms to the pan; simmer for 3 minutes or until the mushrooms are tender and the onions begin to caramelize. Add the Marsala wine and chicken to the skillet and cook for 1 minute or until completely warmed through. Serve immediately.
