Chicken Salad Melts

Ingredients
2 cups shredded skinless and boneless chicken breast for grilling
¼ cup plain Greek yogurt, fat-free
¼ cup canola mayonnaise (like Hellmann's)
2 teaspoons chopped fresh dill
¼ teaspoon salt
¼ teaspoon freshly ground black pepper
3 green onions, thinly sliced
6 whole-grain English muffins, cut and toasted
3 ounces hot grated cheddar cheese (about 3/4 cup)
¾ cup thinly sliced apple
6 lettuce leaves
To make
For more sweetness, replace the apple with grape halves. You can also slice an apple and add it to the salad mix.
Preheat the grill to high heat.Combine the first 7 ingredients in a medium bowl; mix well. Spread 1/3 cup chicken mixture on the bottom half of each muffin. Sprinkle cheese evenly on top. Bake for 1 minute or until the cheese is melted. Spread the apple, lettuce, and muffin tops evenly over the sandwiches.
