Chicken Skewers with Mint Sauce

Ingredients
Chicken:
2 tablespoons fresh lemon juice
1 teaspoon olive oil
½ teaspoon salt
¼ teaspoon ground red pepper flakes
¼ teaspoon ground black pepper, peas
2 garlic cloves, minced
1 pound skinless and boneless chicken breast, cut into 1-inch-thick pieces
Cooking Spray
Mint sauce:
2 slices of white bread (1 1/2 ounces)
¾ cup fresh mint leaves, packed (about 3/4 oz.)
1 tablespoon extra virgin olive oil
2 teaspoons white wine vinegar
½ teaspoon salt
2 garlic cloves, minced
½ cup water

These juicy pieces of marinated grilled chicken with a refreshing sauce are delicious to taste.
To prepare the chicken, combine the first 6 ingredients in a large zippered plastic bag. Add the chicken; cover and marinate in the refrigerator for 15 minutes, turning the bag occasionally. Remove the chicken from the bag; drain the marinade.Prepare the grill.Line chicken pieces on 6 (8-inch) skewers. Place the skewers on a grill rack greased with cooking spray; cook for 8 minutes or until the chicken is tender, turning frequently.To make the mint sauce, put the bread slices in a food processor and grind until they form large crumbs. Add the mint, olive oil, white wine vinegar, 1/2 teaspoon salt, and 2 garlic cloves; beat until smooth. Turning on the food processor, slowly pour water through the food chute and grind until smooth.
