Ingredients

1 can low-sodium, fat-free chicken stock (14 ounces)
2 tablespoons all-purpose flour
2 garlic cloves, minced
¼ teaspoon dried thyme
Cooking Spray
4 skinless and boneless chicken breast halves (4 oz each)

⅛ a teaspoon of salt
⅛ a teaspoon of pepper

To make

Top the plain chicken breasts with a low-fat white sauce seasoned with green onions, garlic, and thyme. Serve with steamed rice to avoid missing a single drop of the savory sauce.
Combine 1/4 cup broth and flour in a small bowl, stirring with a whisk until smooth. Add remaining stock, garlic and thyme; set aside.Place a large nonstick skillet covered with cooking spray on a medium-high heat until it is heated through. Add the chicken and cook for 4-5 minutes or until lightly browned. Flip the chicken over; add 2 tablespoons of green onions. Pour the stock mixture over the chicken; sprinkle with salt and pepper. Reduce the heat and simmer uncovered for 15-20 minutes or until the chicken is cooked through, watering frequently.Remove chicken from pan; keep warm. Bring the sauce to a boil over medium-high heat. Clean the bottom and sides of the pan using a rubber spatula. Cook for 2 minutes or until the sauce is reduced to 3/4 cup. Pour the sauce evenly over the chicken and top with the remaining green onions.
