Chipotle Beef Chili

Ingredients
2 tablespoons olive oil
1 large yellow onion, chopped
1 red or green bell pepper, cored, seeded and diced
3 chopped chipotle peppers in adobo sauce
4 garlic cloves, minced
1 pound round or ground chicken, fried and drained
2-3 tablespoons chili powder
1-2 teaspoons sea salt
2-3 teaspoons ground cumin
1 teaspoon freshly ground black pepper
¼ teaspoon dried basil
1 bottle of dark beer (12 oz) (optional)
¼ cup Worcestershire sauce
1 can tomatoes, diced (28 oz)
2 tablespoons tomato paste
2 cans chicken or beef broth (14 oz each)
1 bay leaf
1 can pinto beans (15 oz), rinsed and dried
1 can of beans (15 oz.), washed and dried
Side dishes: grated Cheddar cheese, sour cream
To make
This chili is also very delicious, made with ground chicken, turkey or pork instead of beef or combined with it. You can also avoid meat altogether. I like to use any of the following beans: navy, great Northern, cannellini, black, garbanzo, adzuki. Use canned beans that are low in sodium or no sodium at all.
Heat the oil in a large heavy saucepan or roasting pan over medium-high heat; add the onion. Reduce the heat to low and cook, stirring occasionally, for 10 minutes or until tender. Add the bell pepper and cook for 5 minutes. Add the chipotle pepper and garlic; cook for about 1 minute. Add the beef and the following 5 ingredients. Add the beer and simmer for about 2 minutes. Add the Worcestershire sauce and the following 4 ingredients. Bring to a gentle simmer and reduce heat to low. Simmer uncovered for 30 minutes. Add the beans, stir and continue to simmer for 10 minutes or until the liquid is slightly reduced. Remove the bay leaf. Decorate if desired.
