Chipotle Macaroni and Cheese

Ingredients
1 can chipotle chili (7 oz) in adobo sauce
1 tablespoon butter
½ cup finely chopped onion
½ cup finely chopped green bell pepper
1 clove garlic, minced
2 tablespoons all-purpose flour
1 can tomatoes (14 1/2 oz), diced, and green chili peppers, peeled
4 cups hot pasta (approximately 2 raw)
2 cups (8 ounces) grated spicy low-fat cheddar cheese
1 cup 1% low-fat cottage cheese
1 cup low-fat milk 2%
¼ cup (1 oz) grated fresh parmesan cheese
1 large egg, lightly beaten

We love these macaroni and cheese dishes because they are incredibly delicious and easy to prepare. You don't even need to make white sauce for this creamy dish. Sour tomatoes set off the richness of cheeses.
Preheat the oven to 350 degrees.Remove 1 teaspoon of adobo sauce from the jar; set aside. Remove 2 chipotle chili pods from the jar; finely chop, measure out 1 tablespoon. Reserve the remaining chili and adobo sauce for another use.Melt the butter in a roasting pan over medium-high heat. Add the chopped chili, onion, bell pepper, and garlic; cook for 4 minutes or until the onion is tender, stirring frequently. Sprinkle with flour; cook for 30 seconds, stirring constantly. Reduce heat to medium; add tomatoes. Cook for 3 minutes or until thickened. Add the remaining 1 teaspoon of adobo sauce, macaroni, cheddar cheese, cottage cheese, milk, parmesan and egg; toss to combine. Place the pasta mixture in a 2-liter baking dish greased with cooking spray; sprinkle the breadcrumbs on top. Bake at 350 ° C for 30 minutes or until bubbles form.
