Chocolate Chip Blondies

1 cup all-purpose flour
1 teaspoon baking powder
¼ teaspoon salt
8 tablespoons (1 stick) unsalted butter
1 cup packed light brown sugar
1 large egg
1 teaspoon vanilla extract
1 cup milk chocolate chips
¾ cup chopped walnuts (optional)

To make

Add a twist to classic blondie bars by adding chunks of chocolate and baking them in muffin tins.
Preheat the oven to 375°F. Drizzle a 12-cup muffin tin with non-stick spray or line it with paper muffin tins. In a small bowl, combine the flour, baking powder, and salt; stir with a fork until smooth.Melt the butter in a medium saucepan over low heat. Remove from heat and add brown sugar. Allow to cool slightly, then add the egg and vanilla until smooth. Add the flour mixture, then the chocolate chips and nuts, if using.Pour a little less than 1/4 cup of batter into each muffin tin and smooth out the tops with a small spatula. Bake until set, 15 to 17 minutes. Allow the blondie to cool completely on a wire rack before removing from the pan.
