Cider-Braised Cabbage

Ingredients
1 tablespoon canola oil
2 cups chopped onion
8 cups chopped green cabbage
1 cup strong cider or plain cider
2 tablespoons wholegrain mustard
¼ teaspoon salt
1 tablespoon apple cider vinegar

A little sauteed onion, apple cider vinegar, and whole-grain mustard make kale stewed in cider a quick and delicious side dish for your evening meals.
Preheat a large skillet over medium-high heat. Add the canola oil; stir to coat. Add the onion; simmer for 2 minutes. Add the kale, cider, mustard, and salt, and toss to combine. Cook under the lid for 5 minutes. Remove the lid and cook for 8 minutes or until the cabbage is wilted, stirring occasionally. Add the vinegar.
