Citrus Green Beans with Pine Nuts

Ingredients

1 pound green beans, chopped
2 teaspoons extra virgin olive oil
¾ cup chopped shallots (about 2 large)
1 teaspoon grated orange zest
1 tablespoon fresh orange juice
¼ teaspoon ground black pepper
⅛ 1 teaspoon coarse sea salt
1 tablespoon toasted pine nuts

Boil the green beans in boiling water for 2 minutes. Drain and rinse under cold running water. Strain well.Preheat a large nonstick skillet over medium-high heat. Pour the oil into the pan; stir to coat. Add the shallots; simmer for 2 minutes or until tender. Add the green beans; mix well. Add the zest, juice, pepper, and salt; simmer for 2 minutes. Spoon onto a platter; sprinkle with nuts.
