This masterful Angel Food cake recipe is good on its own, but it's also easy to change to suit any cravings.
Preheat the oven to 325 degrees.To make the cake, lightly spoon the flour into a dry measuring cup; flatten with a knife. Combine flour and 3/4 cup sugar, stirring with a whisk.Place the egg whites in a large bowl; beat with a mixer on high speed until frothy. Add the tartar and salt; beat until soft peaks form. Add 3/4 cup sugar, 2 tablespoons at a time, whisking until stiff peaks form. Whisk with vanilla, juice and almond extract. Sift 1/4 cup flour mixture over egg white mixture; toss to combine. Repeat with the remaining flour mixture, 1/4 cup at a time.Spoon the batter into an ungreased 10-inch tube pan, spreading evenly. Eliminate air pockets by cutting through the dough with a knife. Bake at 325 ° C for 55 minutes or until the cake begins to spring with a light touch. Turn the pan upside down; cool completely. Loosen the cake from the sides of the mold using a narrow metal spatula. Flip the cake onto a plate.Nutty: For nut lovers; add 1/2 cup finely chopped toasted nuts, such as almonds, walnuts, or hazelnuts, to the floured batter.Chocolate frosting: Whisk together 3 tablespoons unsweetened cocoa, 1 cup powdered sugar, 1/2 teaspoon vanilla extract, and about 3 tablespoons water or iced coffee. Pour over the cooled cake.Chocolate malt: Add 2 tablespoons of malt milk powder and 2 tablespoons of unsweetened cocoa powder to the flour mixture.Citrus frosting: Whisk together 2 tablespoons lime, lemon, and orange juice and 1 cup powdered sugar until smooth. Pour over the cooled cake.Ice cream: Cut the cake horizontally into 3 layers, then brush each layer with softened ice cream or sorbet. Assemble the cake, then freeze it until ready to serve.Orange: Add 2 tablespoons of grated orange zest and 1 teaspoon of orange extract to the batter.Pink Mint: Add 1/4 teaspoon of red food coloring to the batter and add 1/4 cup of finely chopped mints.Seasoned: Add 1 1/2 teaspoons of pumpkin pie spice to the flour mixture.
