Coconut Banana Bread with Lime Glaze

Ingredients
2 cups all-purpose flour
¾ teaspoon baking soda
½ teaspoon salt
1 cup granulated sugar
¼ cup softened butter
2 large eggs
1 ½ cups mashed ripe banana (about 3 bananas)
¼ cup plain low-fat yogurt
3 tablespoons dark rum
½ teaspoon vanilla extract
½ cup coconut flakes with sugar
Cooking Spray
1 tablespoon coconut flakes with sugar
½ cup powdered sugar
1 ½ tablespoons fresh lime or lemon juice

The sharp lime glaze reduces the sweetness of the bread. If you prefer, replace the rum with apple juice.
Preheat the oven to 350 degrees.Lightly spoon the flour into dry measuring cups and smooth with a knife. Combine the flour, baking soda, and salt, stirring with a whisk.Put the granulated sugar and butter in a large bowl; beat with a mixer on medium speed until smooth (about 1 minute). Add the eggs, 1 at a time, beating well after each addition. Add the banana, yogurt, rum, and vanilla; beat until smooth. Add the flour mixture; beat on low speed until smooth. Add 1/2 cup coconut flakes. Spoon the batter into a 9-inch x 5-inch baking dish greased with cooking spray; sprinkle with 1 tablespoon of coconut flakes. Bake at 350 ° C for 1 hour or until a wooden stick inserted in the middle comes out clean. Cool for 10 minutes in the pan on a wire rack; remove from the pan. Combine the powdered sugar and juice, stirring with a whisk; drizzle over the warm bread. Let the bread cool completely on a wire rack.
