Collards With Red Onions

Ingredients
3 packs of fresh herbs (16 oz each)
2 medium-sized red onions, finely chopped
2 tablespoons vegetable oil
2 ½ cups vegetable stock
¼ cup apple cider vinegar
2 tablespoons dark brown sugar
1 ½ teaspoons salt
½ teaspoon dry ground red pepper flakes
To make
Trim and discard the thick stems from the bottom of the green cabbage leaves. Wash the cabbage greens thoroughly.Saute the onion in the preheated oil in a roasting pan over medium-high heat for 8-10 minutes or until soft. Add the broth and the following 4 ingredients.Gradually add the cabbage to the roasting pan and cook, stirring occasionally, for 8-10 minutes or just until it wilts. Reduce the heat to medium and cook, stirring occasionally, for 1 hour or until tender.
