Corn and Cheddar Waffles

Ingredients
1 cup all-purpose flour
½ cup yellow cornmeal
1 ½ teaspoons baking powder
½ teaspoon salt
1 tablespoon sugar
1 ½ cups milk
1 large egg
4 tablespoons unsalted butter, melted and cooled
1 cup fresh corn kernels (from 1 large cob) or 1 frozen corn kernels, defrosted
1 cup grated cheddar
To make
Try these waffles with maple syrup or Southwest-style tomato salsa. A melon or other fresh fruit completes the meal.
Preheat the oven to 200ºF and preheat the waffle iron. In a large bowl, whisk together the flour, cornmeal, baking powder, salt, and sugar. In a glass measuring cup, whisk together the milk, egg, and butter. Pour the milk mixture into the flour mixture and mix until smooth. Add corn and cheese.Spray the waffle iron with cooking spray. Pour the batter onto a wire rack and spread around the edges with a spatula. Cook until the waffles are golden brown, 5-7 minutes. Transfer to a plate, cover loosely with foil and place in the oven to warm up. Repeat with the remaining batter, drizzling the grate with cooking spray before each new batch.
