Ingredients
1 cup wholemeal corn flour
¾ cup all-purpose flour
2 tablespoons sugar
½ teaspoon baking soda
½ teaspoon salt
8 tablespoons (1 stick) unsalted butter, melted and cooled
2 large eggs, beaten
1 ½ cups buttermilk

Preheat the oven to 425°F. Grease an 8-inch baking dish.Combine cornmeal, flour, sugar, baking soda, and salt. In a large bowl, whisk together the butter, eggs,and buttermilk. Mix buttermilk with flour (the dough will be slightly lumpy). Pour the batter into a baking dish.Bake until a toothpick inserted in the middle comes out clean, 22 to 25 minutes. Let the cornbread cool on a wire rack.
