Cowboy Hot Dogs

Ingredients

1 tablespoon olive oil
1 large yellow onion, cut into half moons
4 buffalo* or other hot dogs
4 potato buns for hot dogs
About 6 tbsp mayonnaise
About 2 tablespoons hot brown mustard, such as Gulden's
Approximately 4 tablespoons of barbecue sauce
½ cup grated white cheddar cheese
6 slices cooked bacon, crumbled

To make

With multiple toppings, including caramelized onions, bacon, and barbecue sauce, they can be made to order for a wide variety of diners-from those who love simple hot dogs to those who want them to be full and satisfying enough to last a full day on the stove.
Heat the oil in a large skillet over medium-high heat on a camp stove or on a charcoal or wood-fired grill preheated to medium-high (350 °; you can hold your hand 5 inches above the grill for just 7 seconds). Add the onion and cook until dark golden and very tender, stirring frequently, about 20 minutes.Cook the hot dogs on the grill until they are browned on all sides, about 6 minutes, turning occasionally. Add the rolls and grill, turning frequently, until they are warmed through and lightly browned, about 3 minutes.Spread the rolls with mayonnaise and drizzle with mustard and barbecue sauce. Arrange the hot dogs in buns.Top with the cheese, then the caramelized onion and bacon.* Find bison hot dogs on highplainsbison.com or Whole Foods Market.
