Cranberry Spinach Salad with Gorgonzola

Ingredients

1 cup pecan halves or slices
3 liters fresh spinach leaves (about 8 ounces), washed and crunched
½ cup dried cranberries
1 cup shredded gorgonzola or other blue cheese (4 ounces)
3 tablespoons extra-virgin olive oil with lemon flavor
or
3 tablespoons plain olive oil plus 1/2 teaspoon grated lemon zest
1 tablespoon balsamic vinegar
Salt and pepper

To make

Fresh spinach salad, which is now sold in most supermarkets, requires almost no preparation with washed spinach-fresh or without it. Adding just a few great ingredients like cranberries and gorgonzola makes this salad quite special. Toasting pecans gives them a rich, sweet taste.
In a shallow baking dish, bake the pecans in the oven at 350 ° C until golden brown in the center (break one to check), 8 to 10 minutes. Allow to cool.In a large bowl, gently combine the spinach, pecans, cranberries, chopped gorgonzola, olive oil, and vinegar. Season the salad with salt and pepper to taste.
