Ingredients

2 teaspoons olive oil
2 teaspoons dijon mustard
½ teaspoon salt
½ teaspoon Creole seasoning mix (such as Spice Island)
4 cod fillets (6 oz each) (about 1 inch thick)
Cooking Spray
1 tablespoon fresh lemon juice
Chopped fresh parsley (optional)

The softness of cod goes well with rich flavorings such as Dijon mustard and Creole seasoning. Lemon juice added after cooking enhances the flavor. If you can't find a Creole seasoning, prepare it yourself: Mix 1 tablespoon of paprika with 1 teaspoon of salt, onion powder, garlic powder, dried oregano, ground red and black pepper. Store in an airtight container.
Preheat the oven to 400 degrees.Combine the first 4 ingredients; spread evenly over the fish.Place the fish on a foil-lined baking sheet and brush with cooking spray. Bake at 400 ° C for 17 minutes or until the fish is easily delaminated when tested with a fork. Drizzle the fish evenly with the juice; garnish with parsley if desired.
