Ingredients
2 teaspoons olive oil
2 teaspoons dijon mustard
½ teaspoon salt
½ teaspoon Creole seasoning mix (such as Spice Island)
4 cod fillets (6 oz each) (about 1 inch thick)

The softness of cod goes well with rich flavorings such as Dijon mustard and Creole seasoning. Lemon juice added after cooking enhances the flavor.
