Creole Tomato Salad

Ingredients
Salad:
3 ripe tomatoes, sliced 1/4-inch thick (about 2 pounds)
1 Vidalia onion or other sweet onion, thinly sliced and divided into rings
¼ teaspoon salt
1 tablespoon thinly sliced fresh mint
2 teaspoons chopped fresh green onions
Vinaigrette:
4 teaspoons olive oil
4 teaspoons red wine vinegar
1 teaspoon dijon mustard
½ teaspoon minced fresh garlic

Tomatoes are an essential ingredient in New Orleans Creole cuisine. This salad is easy to prepare, but at the same time has a rich fresh taste.
To make a salad, alternate slices of tomatoes and onions on a platter. Add some salt. Sprinkle with mint and green onions.To make the vinaigrette, combine the oil, vinegar, mustard, and garlic in a jar. Cover tightly and shake vigorously. Pour vinaigrette sauce over the salad and serve at room temperature.
