Crispy Cauliflower Cakes with Herb Sauce and Arugula Salad

Ingredients
Cakes:
12 oz cauliflower florets
1 (10 oz) peeled baked potato, cut into 4 slices
2 large shallots, halved lengthwise
1 ½ tablespoons extra virgin olive oil
2 ounces grated fontina cheese (about 1/2 cup)
½ teaspoon chopped fresh thyme
½ teaspoon salt
½ teaspoon ground black pepper
1 large egg, lightly beaten
½ cup panko (Japanese breadcrumbs), lightly toasted
2 tablespoons grated Parmigiano-Reggiano cheese
Sauce:
2 tablespoons light sour cream
2 tablespoons canola mayonnaise (like Hellmann's)
2 teaspoons chopped fresh flat-leaved parsley
2 teaspoons chopped fresh green onions
¼ teaspoon ground black pepper
1 clove garlic, minced
Salad:
4 cups fresh arugula
½ cup halved grape tomatoes
2 teaspoons extra virgin olive oil
1 teaspoon fresh lemon juice
To make
To toast the panko, place it in a large skillet and cook over medium heat for 3 minutes or until it is lightly browned, stirring frequently.
Preheat the oven to 400 degrees.To make the patties, place the cauliflower, potatoes, and shallots on a baking sheet. Drizzle the vegetables with 1 1/2 tablespoons of oil; toss to combine.
