Crostini with Cucumber, Smoked Salmon, and Dill

Ingredients
1 French bread baguette, cut into 1/2-inch thick slices
2 tablespoons extra virgin olive oil
4 ounces softened cream cheese
½ teaspoon lemon zest
1 tablespoon fresh lemon juice
½ teaspoon kosher salt
2 ½ tablespoons chopped fresh dill, divided
1 english cucumber, thinly sliced
4 oz smoked salmon
¼ teaspoon ground black pepper
To make
To prepare this delicious snack, sprinkle cream cheese, cucumber and smoked salmon on the slices of baked bread.
Preheat the oven to 375 degrees. Arrange the bread slices in a single layer on a side-lined baking sheet; brush each slice on top with olive oil. Bake for 8 to 10 minutes or until lightly browned.Combine cream cheese, lemon zest and juice, salt, and 2 tablespoons dill in the bowl of a food processor; beat until smooth. Spread the cream cheese mixture evenly over the toast. Place 2 cucumber slices on each piece of toast, pressing lightly into the cream cheese mixture. Spread the smoked salmon evenly over the cucumbers. Sprinkle the toast evenly with black pepper and the remaining 1 1/2 teaspoons of dill.
