9 ½ ounces wholemeal flour (about 2 cups)
2 tablespoons flaxseed
½ teaspoon baking soda
¼ teaspoon salt
⅓ cup granulated sugar
⅓ cup packed dark brown sugar
2 large egg whites
1 large egg
1 ½ teaspoons vanilla extract

Preheat the oven to 350 degrees.Spoon the flour into dry measuring cups; flatten with a knife. Combine the flour, flaxseed, baking soda, and salt in a bowl, stirring with a whisk. Combine the sugar, egg whites, and egg in a bowl; beat with a mixer on high speed for 2 minutes. Add vanilla; mix well. Add the flour mixture to the egg mixture; mix until smooth. Roll in chocolate and almonds. Divide the dough into 3 equal parts. Roll each serving into a 6-inch long roll. Place the rolls 3 inches apart on a baking sheet lined with parchment paper. Roll out to a thickness of 1 inch. Bake at 350 ° C for 28 minutes or until set.Remove the rolls from the baking tray; cool for 10 minutes on a wire rack. Cut the rolls diagonally into 30 (1/2-inch) slices. Place on a baking sheet, cut sides down. Reduce the oven temperature to 325 degrees; bake for 7 minutes. Turn the cookies over; bake for 7 minutes (the cookies will be slightly soft in the center, but will harden as they cool). Remove from the baking tray; cool on a wire rack.
