Ingredients
3 cups all-purpose flour
2 tablespoons sugar
1 teaspoon salt
2 sticks (16 tablespoons) chilled unsalted butter, cut into chunks
2 tablespoons chopped vegetables, chilled
3 ½ pounds Granny Smith apples, peeled, cored, sliced
¾ cup light brown sugar
5 tablespoons all-purpose flour
1 tablespoon cornstarch
zest of 1 lemon
2 tablespoons lemon juice
½ teaspoon salt
1 teaspoon cinnamon
pinch of ground nutmeg
pinch of ground cloves
2 tablespoons chilled unsalted butter, cut into small pieces
1 large egg
1 tablespoon milk
1 tablespoon sugar

Prepare the cake: mix flour, sugar and salt. Brush with butter and chop. Add 1/3 cup of iced water; stir until the dough sets. Divide and form 2 circles. Wrap; refrigerate for 45 minutes.Preheat the oven to 400°F. Roll out one circle into an 11-inch pan; place on a 9-inch pie dish. Trim the protrusion to 1/2 inch. Roll out the second circle.Prepare the filling: Mix apples, sugar, flour, cornstarch, lemon zest and juice, salt and spices. Spoon it onto a pie plate. Brush with butter. Whisk the egg and milk together. Brush the top with icing, top with the dough. Trim to 1/2 inch. Knead the dough to seal.Brush the cake with icing; sprinkle with sugar. In the upper part of the cake, make incisions to make holes. Place the cake on a baking sheet lined with foil; bake for 15 minutes. Reduce the heat to 350 ° F; bake for 55 minutes, until the crust is golden and the filling is soft.
