Combine 1 cup of the peanut butter, 1 cup of the sugar, 1 large egg, and 1 teaspoon of the vanilla extract in a large bowl until smooth; shape the dough into 1-inch-thick balls. Place the balls 1 inch apart on ungreased baking sheets and gently flatten with the prongs of a fork. Bake at 325 degrees for 15 minutes or until golden brown. Transfer to a wire rack to cool.Options: Spread 1 cup of desired additives, such as chocolate chips, chocolate-coated toffee, or crushed peanuts, evenly over the prepared cookie dough on baking sheets; bake as directed.Peanut Butter and Chocolate Chip cookies: Divide the peanut butter cookie dough in half. Place 2 squares of melted semi-sweet chocolate on half of the dough. Shape the dough into 30 balls, half-peanut butter and half-chocolate-peanut butter thick. Gently flatten with a spoon.
