Easy Chicken Fajitas

Ingredients
2 tablespoons vegetable or olive oil, divided
3 boneless and skinless chicken breast halves, cut crosswise into strips
1 recipe for seasoning for fajita, divided
½ cup water
2 large onions, sliced
3 bell peppers (one green, yellow and red each - the most delicious, but not mandatory), sliced
2 garlic cloves, minced
12 fajita-sized flour tortillas, wrapped in a cloth and heated in the microwave for 1-2 minutes
Salsa and sour cream to serve (optional)
To make
Prepare chicken fajitas for every weeknight. Our simple chicken fajitas recipe, which requires less than 10 ingredients and takes just 20 minutes to prepare, is perfect for both kids and adults.
Heat 1 tablespoon of oil in a large skillet over medium-high heat until hot. Add the chicken strips and cook, stirring a couple of times, until almost tender, 5 to 6 minutes. Add half of the fajita seasoning and water, mix well, and let the chicken finish cooking. Transfer the chicken to a bowl; cover to keep warm.Heat the remaining 1 tablespoon of oil in a skillet until hot. Add the onion and pepper; cook, without stirring, until they are soft and the caramelized brown pieces begin to appear in the pan, 3 to 4 minutes. Toss to combine; add garlic and remaining fajita seasoning. Allow to cook for about 2 more minutes. Add the vegetables to the seasoned chicken. (Or serve the vegetables separately.)Serve the fajita mixture on warm tortillas with salsa and sour cream, if using.
