Easy Linguine With White Clam Sauce

Ingredients

4 ounces raw linguine
1 tablespoon unsalted butter
½ small onion, finely chopped (about 1/4 cup)
½ teaspoon bottled minced garlic
¼ teaspoon salt
¼ teaspoon freshly ground black pepper
2 (6 1/2-ounce cans) chopped clams, drain, reserving 2 tablespoons of juice
1 teaspoon extra virgin olive oil
2 tablespoons chopped parmesan Romano cheese, divided
1 green onion, chopped

This healthy version of clam and pasta sauce features canned clams in a light sauce of butter, onion and garlic, served with linguini or other pasta of your choice.
Prepare the linguine according to the instructions on the package. Save 2 tablespoons of pasta water before draining.While the pasta is cooking, prepare the clam sauce: In a skillet over medium heat, heat the butter until it is hot, about 2 minutes. Saute onion and garlic for 1 minute. Season with salt and pepper; continue to simmer for another minute or until the onion is soft and the garlic is fragrant but not browned. Add the peeled and chopped clams and the remaining 2 tablespoons of clam juice; mix gently to make a smooth dish, and simmer.Add the remaining 2 tablespoons of pasta water to the sauce pan. Stir in the sauce and continue to simmer for 3 minutes or until slightly thickened.Drizzle the linguine with olive oil and divide between two bowls. Drizzle each serving of pasta with half the clam sauce, 1 tablespoon of cheese, and a sprinkle of chopped green onions.
