Egg Salad Sandwiches with Bacon and Sriracha

Ingredients
2 slices of bacon, sliced in the center

8 slices wholemeal bread

In the dairy section of the supermarket, look for pre-prepared eggs, such as Eggland's Best.
Cook the bacon in a medium saucepan over medium-high heat for 3 minutes or until crisp. Remove the bacon from the pan; crumble. Place the bacon in a large bowl. Add the onion and the next 5 ingredients (season with salt). Carefully add the eggs.Place 1/2 cup arugula on each of the 4 slices of bread. Sprinkle each serving with 1/3 cup egg mixture and 1 slice of bread.
