Eggplant Parmesan


1 (1.5 lb) eggplant
Cooking Spray
1 cup grated parmesan cheese
2 cups shredded mozzarella
1 ½ cups spaghetti or marinara sauce

To make

Preheat the oven to 375 degrees. If desired, peel the eggplant and cut it into 1/4-inch thick slices. Place half of the eggplant slices in a lightly oiled 11-by-7-inch baking dish, 1 1/2 inches deep. Top the eggplant with half the parmesan cheese, then 3/4 cup mozzarella and half the spaghetti sauce. We repeat.Cover the dish and bake for 40 minutes or until the eggplant is tender. Uncover, sprinkle with the remaining 1/2 cup mozzarella cheese, and bake for another 5 minutes or until the cheese is melted.
