Ingredients
4 thick slices of bacon
2 tablespoons olive oil
1 medium-sized sweet onion, chopped
1 medium-sized sweet potato (about 10 ounces), peeled and cut into 1/2-inch cubes
2 medium turnips (about 12 ounces), peeled and cut into 1/2-inch cubes
1 tablespoon white wine vinegar
1 pound small fresh brussels sprouts, cut into quarters
2 garlic cloves, chopped
To make
Replace potatoes and turnips with any of your favorite root vegetables.
Cook the bacon in a 12-inch cast-iron skillet over medium-high heat, turning occasionally, for 8 to 10 minutes or until crisp. Remove the bacon; drain, leaving 2 tablespoons of the filling in the pan. Coarsely chop the bacon.Add the oil to the hot mixture in the pan. Saute the onions and sweet potatoes in the preheated oil and sprinkle over medium-high heat, stirring occasionally, for 5 minutes. Add the turnips; cook, stirring occasionally, for 8 minutes.Mix vinegar and 2 tablespoons of water. Add the Brussels sprouts, garlic and vinegar mixture to the pan. Cover and cook, stirring occasionally, for 5 minutes or until the vegetables are tender. Add the bacon, season with salt and pepper to taste.
