Ingredients
24 large eggs
½ cup milk
¼ cup whipped cream
1 ½ teaspoons salt
½ teaspoon freshly ground pepper
½ teaspoon hot sauce
¼ cup butter, divided
1 large tomato, sliced and dried on a paper towel
⅓ cup chopped fresh green onion
¼ cup chopped fresh flat-leaved parsley

A hearty scrambled egg with fresh herbs and tomatoes gives a piquant taste.
Whisk together the first 6 ingredients in a large bowl.Melt 2 tablespoons butter in a large nonstick skillet over medium-high heat; add half of the egg mixture and cook, without stirring, until the eggs begin to settle to the bottom. Run a spatula along the bottom of the pan to form large curd cakes. Cook until the eggs are thickened but still moist. (Do not stir constantly.) Add half a tomato. Remove from heat and transfer to a warm platter. Repeat with the remaining butter, egg mixture, and tomatoes. Sprinkle a whole egg dish with green onions and parsley; serve hot.
