Fig and Lime Jam

Ingredients
2 cups sugar
¼ cup fresh lime juice (about 3 limes)
2 pounds fresh brown turkey figs, cut into 1/4-inch-thick slices (approximately 6 cups)

We tested this recipe with a not - too-sweet brown turkey fig; if you use the sweeter Mission black fig, you may need to reduce the amount of sugar. Puree of figs can be infused all night.
Combine all the ingredients in a large, heavy saucepan; mash the fig mixture with a potato masher until smooth. Let stand for 2 hours. Bring the mixture to a boil over medium-high heat. Reduce the heat; simmer for 35 minutes or until the mixture begins to thicken slightly, stirring occasionally. Allow to cool completely. Cover and refrigerate overnight.
