Fingerling Potatoes with Avocado and Smoked Salmon

Ingredients
1 pound french fries, halved lengthwise
1 tablespoon olive oil
½ teaspoon salt
¼ teaspoon pepper
1 ripe avocado, halved
1 tablespoon chopped fresh dill
1 teaspoon lemon zest
2 teaspoons fresh lemon juice
⅛ a teaspoon of salt
1 pack (4 oz) thinly sliced smoked salmon
Garnish: sprigs of fresh dill
To make
Potato halves serve as the base for savory potato appetizers-avocado sticks and smoked salmon.
Preheat the oven to 400 degrees. Mix the first 4 ingredients together. Place the potatoes, cut side down, on a lightly oiled jelly roll tin. Bake for 20 minutes or until they are soft and lightly browned. Allow to cool completely (about 20 minutes).Meanwhile, put the avocado pulp in a bowl; mash with a fork. Add the dill and the following 3 ingredients. Spoon the mixture onto the cut sides of the potatoes and top each with 1 slice of salmon.
