Five-Onion Soup

Ingredients

½ cup butter
2 white onions, halved and sliced
1 red onion, halved and sliced
5 shallots, sliced
½ bunch fresh thyme sprigs
½ teaspoon cumin seeds
6 cups chicken stock
2 cups veal or beef broth
1 teaspoon salt
1 teaspoon coarsely ground black pepper
1 12-ounce loaf of French bread, sliced and toasted
½ cup (2 oz) grated gruyere cheese
4 green onions, sliced
¼ cup chopped fresh green onion

To make


Melt the butter in a large (6-quart) soup pot over medium-high heat; add the onion and shallots. Cook, stirring frequently, for 30-35 minutes or until the onion is soft and dark golden brown.Tie the thyme into a bundle with kitchen thread and add to the onion mixture. Add cumin seeds, chicken stock and veal stock. Bring to a boil; reduce heat and simmer uncovered for 20 minutes. Remove the thyme and season with salt and pepper.Pour the soup over the plates suitable for baking. Top with slices of French bread and sprinkle with cheese. Place the bowls on a baking sheet; bake for 2 minutes or until the cheese is melted and bubbling. Sprinkle each serving evenly with spring onions and chives.
