Fried Egg and Avocado Toasts

Ingredients
1 teaspoon olive oil
4 large eggs
1 peeled ripe avocado, mashed
4 slices (1 oz each) of rich toasted wholemeal bread
1 cup alfalfa sprouts
¼ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
½ cup chilled fresh salsa
To make
Toasted eggs, fresh kale, and salsa complement avocado toast for quick, hassle-free cooking. This is a win-win meal for breakfast, lunch or dinner.
Preheat a large nonstick skillet over medium-high heat. Pour the oil into the pan; stir to coat. Add the eggs to the skillet; cook for 2 minutes. Cover and cook for 2 minutes or until just cooked through.Spread a quarter of the avocado puree evenly over each slice of toast. Spread 1/4 cup sprouts on top of the avocado puree on each slice of toast. Brush each slice of toast with 1 fried egg. Sprinkle the eggs evenly with salt and black pepper. Sprinkle each assembled avocado toast with 2 tablespoons of fresh salsa.
