1 cup of boiling water
½ cup chopped dates
4 large eggs
2 cups mashed very ripe bananas (about 4)
¾ cup granulated sugar
½ cup unsweetened applesauce
1 teaspoon vanilla extract
1 ½ cups brown rice flour
½ cup sorghum flour
1 teaspoon baking soda
½ teaspoon salt
¼ teaspoon ground nutmeg
⅓ cup melted butter
½ cup chopped walnuts

Preheat the oven to 350 degrees. Pour 1 cup of boiling water over the dates in a small bowl. Let stand for 10 minutes. Drain and pat dry.Lightly beat the eggs with a whisk in a large bowl. Whisk the bananas and the next 3 ingredients together until smooth.Combine the brown rice flour and the following 4 ingredients in a small bowl. Gently mix the flour mixture with the egg mixture, stirring until the mixture is smooth. Gently stir in the melted butter, walnuts and dates. Spoon the mixture onto a lightly greased 9-inch x 5-inch bread pan.Bake at 350 ° C for 1-10 minutes or until a wooden stick inserted in the middle comes out clean.
