Graham Cracker Fudge

Ingredients
2 tablespoons unsweetened chocolate for baking
14-ounce can of condensed milk with sugar
½ teaspoon vanilla extract
1 ¾ cups graham crackers, finely chopped
1 ½ cups chopped pecans, walnuts, or almonds, divided

My mom wrote down her favorite fudge recipe for me the first Christmas I got married (over 40 years ago). She kept the original clipping from the magazine for November 1942. Now I have both instances ... they're yellowed with age, but the fudge is just as delicious and chewy as ever.
Melt the chocolate in a double boiler over hot water. Add the condensed milk and cook, stirring constantly, for about 5 minutes or until the mixture thickens. Add vanilla, Graham cracker crumbs, and one cup nuts; mix well. Sprinkle 1/4 cup remaining nuts on the bottom of a greased 8-inch x 8-inch baking dish. Using a knife dipped in hot water, spread the chocolate mixture over the mold. Sprinkle the remaining 1/4 cup nuts on top. Cover and refrigerate overnight. Cut into small squares.
