Green Beans with Bacon

Ingredients
2 ½ pounds green beans, chopped
3 slices of bacon
½ cup chopped shallots
1 teaspoon freshly squeezed lemon juice
¼ teaspoon salt
¼ teaspoon freshly ground black pepper

This simple side dish is a classic dish that will appeal to everyone. Combine the cooked green beans with the sauteed shallots, lemon juice, salt and pepper, and top with the crumbled bacon.
Cook the green beans in boiling water for 5 minutes or until tender and crisp. Drain and dip the beans in ice water; strain.Bake the bacon in a roasting pan over medium-high heat until crisp. Remove the bacon from the pan; crumble. Add the shallots to the filling in the pan; simmer for 4 minutes or until tender. Add the beans, juice, salt and pepper to the skillet; toss to combine. Cook for 5 minutes or until fully warmed, stirring frequently. Remove from heat. Sprinkle the bean mixture with bacon; toss to combine.
