Green Beans with Caramelized Onions and Walnuts

Ingredients
1 ½ pounds green beans, chopped
½ cup chopped walnuts
2 tablespoons extra-virgin olive oil, divided
4 cups thinly sliced onion
1 teaspoon chopped fresh thyme
2 teaspoons white balsamic vinegar
½ teaspoon kosher salt
¼ teaspoon freshly ground black pepper

Boil the green beans in boiling water for 2 minutes. Drain, rinse with cold water and strain well.Place the walnuts in a large nonstick skillet; cook over medium heat for 7 minutes or until lightly browned, shaking the pan frequently. Remove the walnuts from the pan; set aside. Add 4 teaspoons of oil to the skillet; stir to coat. Add the onion and thyme to the pan; cook for 17 minutes or until the onion is very soft and golden brown, stirring occasionally. Remove the onion mixture from the pan; keep warm.Return the skillet to medium-high heat. Add the remaining 2 teaspoons of olive oil to the skillet; stir to coat. Add the green beans; cook for 2 minutes or until fully warmed, stirring frequently. Add the onion mixture and vinegar to the pan; cook for 2 minutes or until fully warmed, stirring occasionally. Remove from heat. Sprinkle with nuts, salt and pepper. Serve immediately.
