Grilled and Dilled Corn on the Cob

Ingredients
½ cup canola mayonnaise
½ cup light sour cream
¼ cup chopped fresh dill
2 tablespoons fresh lime juice
¼ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
10 cobs of peeled corn
Cooking spray
2 ounces cotilla, queso blanco, or feta cheese, finely grated (about 1/2 cup)
1 ½ teaspoons chipotle chili powder

This creamy, savory filling perfectly complements sweet corn on the cob.
Preheat the grill to medium-high heat.Combine the first 6 ingredients in a shallow bowl.Place the corn on a grate greased with cooking spray; cover. Cook the corn on the grill for 12 minutes or until lightly browned, turning occasionally. Roll the hot corn in the mayonnaise mixture; stir to coat. Place the corn on a platter, sprinkle with cheese and chili powder.
