Grilled Avocado Salad

Ingredients
3 hard, ripe avocados, peeled and halved
3 tablespoons extra-virgin olive oil, divided
3 tablespoons fresh lime juice (from 2 limes), divided
1 ½ teaspoons kosher salt, divided
½ teaspoon black pepper, divided
12 oz multicolored cherry tomatoes, halved (about 2 cups)
¼ cup fresh coriander leaves
1 ½ ounces shredded Kotija cheese (about 1/3 cup)
½ cup pickled red onion
To make
Preheat the grill to medium heat (350 ° F to 400 ° F). Brush the avocado halves evenly with the butter and lime juice, 1 tablespoon each. Sprinkle evenly with 1 teaspoon salt and 1/4 teaspoon pepper. Grill, slice side down, uncovered, until edges begin to brown, 5-7 minutes. Carefully remove from grill; set aside.Combine the tomatoes, cilantro, and remaining 2 tablespoons each of the oil and lime juice, 1/2 teaspoon salt, and 1/4 teaspoon pepper in a medium bowl. Let stand for 5 minutes.Place the avocado halves, cut side up, on a platter. Top evenly with the tomato mixture, kotiji and pickled red onion.
