Grilled Bananas with Ice Cream and Caramel

Ingredients
1 ½ cups sugar
1 cup heavy cream
2 tablespoons unsalted butter, sliced
1 teaspoon vanilla extract
Pinch of salt
2 tablespoons light brown sugar
½ teaspoon cinnamon
2 tablespoons honey
6 hard but ripe bananas
6 vanilla ice cream balls

As if grilled bananas with ice cream and caramel aren't sophisticated enough, garnish this dessert with coconut chips, chocolate chips, or crushed toasted pecans, walnuts, or almonds.
Prepare the caramel: Stir the sugar and 1/2 cup water in a saucepan over medium-low heat until the sugar is dissolved. Increase the heat to medium-high. Carefully watching, cook the syrup, without stirring, until it turns a dark amber color, 10-15 minutes. Remove from the heat and carefully pour in the cream (the mixture will start to bubble and splash). Reduce the heat to low; cook, stirring constantly, until the mixture thickens and becomes smooth, 2 to 5 minutes. Remove from the heat; whisk together the butter, vanilla, and salt.In a large bowl, combine brown sugar and cinnamon. Heat the honey in the microwave for 15 seconds.Preheat the grill to medium-high heat. Cut the unpeeled bananas in half lengthwise. Brush the cut sides with honey; sprinkle with the sugar mixture. Grill with butter. Place the bananas on a wire rack, cut sides up. Cook until the bananas are tender and the flesh is separated from the skin, 3-4 minutes.Using 2 tablespoons, carefully peel 2 banana halves. Place 2 halves in a bowl, top with ice cream and drizzle with caramel. Repeat with the remaining bananas, ice cream, and caramel.
