4 medium-sized beets (about 1/2 cup total), red and golden in color, peeled and chopped
3 tablespoons olive oil, divided
1 teaspoon kosher salt
¼ teaspoon ground black pepper
2 ounces grated Parmigiano Reggiano cheese (about 1 cup)
1 tablespoon chopped fresh green onion

If you've never grilled beetroot before, you're missing something. Our grilled beets have a pleasant, earthy taste, which is emphasized by roasting on the grill. Cheese and herbs really complement it all. If you want to add extra flavor, you can add citrus fruits, such as fresh orange juice and zest, and some pistachios. This already simple recipe can be prepared in advance by pre-roasting the beets. Be sure to wrap the yellow and red beets separately so that the color of the red beetroot doesn't spill over onto the yellow beetroot. It's perfect as a side dish for a weeknight dinner, especially as an addition to fish or meat.
Preheat the oven to 375°F. Drizzle the beets with 2 tablespoons of oil; sprinkle with salt and pepper. Wrap the beets individually in aluminum foil; place on a baking sheet. Bake in the preheated oven until tender if pierced with a fork, 1 hour to 1 hour and 15 minutes. Remove from the oven.Preheat the grill to high heat (450 ° F to 500 ° F). Remove the foil from the beetroot. Place the beets on a greased wire rack; saute uncovered, turning occasionally, until lightly browned, 10 to 12 minutes. Remove from the grill; let stand for 10 minutes.Cut each beetroot into 6 slices; place on a serving platter. Drizzle evenly with the remaining 1 tablespoon of oil; sprinkle with cheese and green onions.
